One of my favourite foods is Falafels. The other day , i had a craving for some, and as we are no-where near a falafal shop, i had to make my own. Lucky, i had some chickpeas in the cupboard ( bought from a fantastic middle-eastern supermarket in Dandenong. ).
I THEN..
soaked them overnight.
blitzed them up in the processor
added a tiny bit of bicarb soda, tiny bit of cornflour,some parsley, garlic, cumin, coriander (ground) and salt and pepper
formed them into patties
shallow-fried them in some Rice-Bran oil
AND FINALLY
made them into wraps, with spinach, yoghurt , red onion and sweet chilli sauce
AND ATE THEM...




Yum! I love a good felafel.
