Cannelloni...
I do seem to have a flux of silverbeet. Not sure if that is even a word. But always thinking of ways to use it.This is my latest way to use Silverbeet or Rainbow Chard.
Cannelloni with ricotta and silverbeet. There's that word again. Silverbeet, it almost sounds glamourous. Sterling silver beet..
so i get some ricotta and add some chopped S Beet, grated parmesan, chopped spring onion, nutmeg and salt and pepper.
i push this mixture into some cannelloni tubes
i lay them in a baking dish
then i pour over some bottled tomato passata
and sprinkle with lots more cheese

then bake in moderate oven for 40 to 50 mins

I love where we live...
We live on a small piece of acreage, but big enough to grow our own vegies, big enough for the kids to play, big enough to have a little pony,and big enough to have big trees..

Red Velvet Bandwagon
THought i'd give Red Velvet cakes a go. Heard so much about them. You can even buy the packet cake version. My best friend made it from the pack last weekend for her family. She got that many good comments, oohh aahh, yum, how did you make this. She bluffed her way through and her family are none the wiser.. She is a smart cookie.
With my version, i just followed that old recipe of Boiled Chocolate Cake (google it) and added some pureed roasted beetroot for the color. I thought they were ok, well they must have been , they didnt hang around long enough to be iced/ frosted..
