Bathroom reno..

Nearly finished. We are lucky to have a cottage that we are living in,
on the property while we do the renovations. Another reason why it's taken us so long ! And maybe also, budget.. But we are getting there

some more jars...



JARS

I'm a big collector of jars, always have been. Jars cant be thrown out, they are so useful. I used to just keep them for when i made chutneys or relish. Now i store all my pantry goods in them( nuts,seeds, oats, spices, herbs) my craft stuff, using them as vases or for drinking from..I"ve found another good thing to do with them. Spray painting the lids to make them look pretty.
I will store buttons, ribbons, rubberbands, hair elastics, nails, drawing pins,etc etc in these..

Mint Slice

This is my Mum's recipe. It was a favourite when i was growing up, now i make it for the cafe, and special occasions.
Peppermint Slice

Base
1 and half cups Self Raising Flour
half cup of brown sugar
1 cup dessicated coconut
180 gms butter

Filling
250 gms icing sugar
2 and half tbsp milk
50gms copha
1tsp peppermint essence

Topping
1 Block cooking chocolate, melted


Melt the butter and add to dry ingrediants for base. Press into lined slice tray. Bake mod oven (180 degrees) until light golden brown. While still warm , spread over mint filling. Mint Filling : melt copha and milk together over warm heat in saucepan, add essence and sifted icing sugar, stir till smooth.

When it has been refridgerated till cold, carefully pour over melted chocolate, spread evenly, then let set...nice..slice..
When i melt the chocolate, i sometimes add a couple of tablespoons of oil, it makes a smoother chocolate topping and it's easier to slice..
